Steamed Artichokes with Sun Dried Tomato Dipping Sauce

You can steam, roast, grill, or microwave these. To make the sauce, you can either use sun dried tomatoes or a sun dried tomato vinaigrette.
4 artichokes, fresh
1/3 cup mayonnaise, light or reduced fat
1 tablespoon sundried tomatoes, finely chopped
Place about 3 cups of water in a large pot and bring to a boil over high heat. Use kitchen scissors and cut ends from leaves of artichokes and rinse artichokes well (see photo). Trim the tough end of the stems from if desired. Place artichokes in steamer basket with the stem side down, and place the steamer basket in the pot. Cover and reduce heat to simmer. Cook for about 35 to 45 minutes until leaves can be removed easily. Length if time varies based on artichoke size and desired level of doneness). To make the dipping sauce, combine mayonnaise and chopped sun dried tomatoes in a small bowl and mix well. Add lemon zest if desired.
