Garlic Spinach Rice

Sometimes it is hard to believe that something so simple is also that delicious. This is one of them. We prefer to use the olive oil type of cooking spray.
8 ounces rice, brown, precooked, or quick cooking
cooking spray, olive oil type
3/4 cup onion(s), medium, chopped
1 clove garlic, fresh, minced
2 cups spinach, fresh baby, chopped
1/8 teaspoon salt
Prepare rice according to package directions. Coat a small skillet with cooking spray and heat to medium heat. Saute' onions and garlic for about 3 minutes or until tender. Place spinach in a large bowl. Toss in cooked rice, onion mixture and salt until spinach wilts slightly.
