Tomato and Bacon French Toast

This recipe evolved, for the kids, from our delicious BLT French Toast recipe because the kids did not want to see salad on their plates for breakfast. Turns out the adults liked it too. The kids are not fans of chunky tomatoes, so we pureed them in the food processor and put them on the french toast under the cheese, added basil and dropped the lettuce all together.
8 slices bread, sourdough, medium slice
4 egg(s), large
1 cup milk, 2% fat
1 cup cheese, cheddar
2 tomato(es), medium
3 leaves basil, fresh
4 slices bacon, precooked and reduced sodium, crumbled
Lightly spray a large skillet or griddle pan with cooking spray and place over medium heat. In a shallow dish, lightly beat the eggs and stir in the milk. Dip the bread slices into the egg mixture and coat both sides. Cook bread for 1 to 2 minutes per side or until lightly browned. Puree the tomato and basil in the food processor or blender. Lightly salt and pepper to taste. Spread the tomato mixture over each slice of bread. Sprinkle with cheese and bacon. Serve warm.
