These are a big family hit!! We gave a dish full to a family friend who raved about it. It is a great choice to take to a family who needs a break from cooking. Make one for yourself and one for them. One tip, we found that we preferred to stuff more pasta shells with less stuffing than to over stuff a few shells. You can substitute chicken or lean ground beef.

Ingredients

12 ounces pasta shells, large

1 tablespoon olive oil

1 onion(s), medium, minced

1 pound ground turkey, lean

1 package (10 ounce) spinach, frozen, chopped, thawed and drained

1 cup mushrooms, Crimini or button or combo, minced

1 package (8 ounces) cream cheese, 1/3 less fat

1 1/4 cup cheese, mozzarella, low moisture and part skim milk, shredded

1 cup parmesan cheese, grated

1 cup roasted red peppers, jarred, chopped

1/2 teaspoon pepper, black, ground

1 jar (28 ounce) marinara sauce, low sodium, already prepared, jar or deli, such as Amy's

cooking spray

Preparation

Preheat oven to 350 degrees. Cook pasta shells according to package directions. Meanwhile, heat olive oil in a large skillet over medium high heat. Cook onion and garlic for about 3 minutes or until soft. Add turkey and mushrooms and cook for about 6 minutes or until browned. Remove from heat and stir in drained spinach, cream cheese, mozzarella cheese, 1 1/2 cups of the parmesan, red bell pepper and pepper. Pour half of the marinara sauce into a large baking dish, lightly sprayed with cooking spray. Stuff, but don't overstuff, the shells with the turkey mixture. Place the stuffed shells in a single layer over the sauce. Spoon the remaining sauce over the shells and sprinkle with the remaining parmesan cheese. Bake for 50 minutes.
