Bubbly Cheese Toasts

My kids beg for these and since I do not enjoy frying eggs (or cleaning the pan) I love them too! For a fancier fare, try out different cheeses (like gruyere or fontina) and hearty artisan breads.
2 egg(s), large
1 cup cheese, sharp cheddar, shredded
1/2 cup cheese, jack
4 slices bread, whole grain Italian or other, halved
3/4 cup tomato(es), grape or cherry
1/2 teaspoon pepper, black, ground
1 teaspoon parsley, dried, divided
Preheat oven to 450 degrees. In a medium mixing bowl lightly beat the eggs and stir in the cheeses, 1/4 teaspoon of the pepper and 1/2 teaspoon of the parsley. For easy clean up, line a baking dish or cookie sheet with foil. Lightly spray with cooking spray. Divide the cheese mixture among the bread slices, spreading evenly and place in the baking dish. Add the tomatoes to a corner of the baking dish and sprinkle with 1/4 teaspoon of pepper, 1/2 teaspoon of parsley and just a pinch of salt. Bake for 10 to 15 minutes or until each toast puffs up and is light golden brown. Serve the toasts topped with the tomatoes or on the side.
