Slow Cooker Sweet Potato Chowder
Prep Time: 20 minutes
Cooking Time: 6 to 8 hours on low setting, 3 to 4 hours on high
Comments: Of course this soup is extra tasty when using half and half...but don't be afraid to substitute good old 1 %. It is still excellent and a very flavorful soup that will also appease your sweet tooth.
2 1/2 pounds sweet potatoes, peeled and cut into 1 inch pieces
1 onion(s), medium, chopped
1/4 cup maple syrup
1 teaspoon garlic, bottled minced
1/2 teaspoon sage, dried
1/4 teaspoon salt
1/4 teaspoon pepper, black, ground
2 can (14 ounces each) chicken broth, reduced sodium (or vegetable broth, reduced sodium)
1 cup water
1/2 cup half and half
In a slow cooker, combine all ingredients except for the half and half. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. Using a potato masher or a hand held blender, mash the soup to the desired consistency. Stir in the half and half and serve. Garnish with crumbled bacon, parsley or green onion if desired.
