Yum! You can make all sorts of substitutions in this based on what is in your refrigerator. Substitute veggies like asparagus, carrots, peppers, kale...anything! Or use straight broth if there is no wine in the house, or straight wine for that matter. Also, many cheeses work, and you can use a reduced fat cheese to lower the fat and calories.

Ingredients

2 cups mushrooms, Crimini or button or combo, sliced

1 onion(s), medium, chopped

2 cloves garlic, fresh, minced

2 tablespoons olive oil

1 cup rice, Arborio

2 cups chicken broth, gluten free, reduced sodium (or vegetable broth, reduced sodium)

1 cup wine, white, dry

3/4 cup broccoli florets

4 tomato(es), Roma, seeded and chopped

1/2 pepper(s), bell, red, yellow, or green

1 cup cheese, Fontina, shredded

1/4 cup parmesan cheese, grated

3 tablespoons parsley, fresh, snipped

Preparation

In a large saucepan heat oil over medium heat and cook mushrooms, onion and garlic until onion is just tender. Add rice and cook for about 5 minutes or until rice is golden brown, stirring often. Meanwhile, in a microwave safe dish heat the broth and wine in the microwave for about 1 minute or until very hot. Carefully and slowly add 1 cup of the broth to the rice, stirring constantly. Continue to cook and stir over medium heat until the liquid is absorbed. Next add the broccoli and 1/2 cup broth/wine, stirring constantly until liquid is again absorbed. Now, add 1 cup of the broth/wine 1/2 cup at a time, stirring constantly until liquid is absorbed. Stir in about 3 or 4 tomatoes (reserving one for garnish), bell pepper and remaining cup of broth/wine again until liquid is absorbed. Lastly stir in the fontina, parmesan and parsley. Garnish with remaining fresh tomato.
