Shrimp and Cream Cheese Roll

This is a simple and fun way to serve shrimp with crackers. You can make a day ahead. Allow 2 hours to chill before serving.

Ingredients

8 ounces cream cheese, 1/3 less fat

1/2 pound shrimp, cooked, peeled and deveined

1/2 cup chili sauce (bottled)

2 green onion(s)

plastic wrap

12 crackers

4 stalks celery

Preparation

Place cream cheese in between two sheets of plastic wrap. Carefully use a rolling pin to roll out to a rectangle about 10 inches by 8 inches in size. Peel off the top layer of plastic wrap. Chop shrimp into small pieces. Mix shrimp and chili sauce in a small bowl. Spread shrimp mixture over top of cream cheese leaving a half inch around all edges. Also set aside 2 tablespoons of shrimp mixture for garnish. Carefully roll cream cheese into a roll, peeling back the plastic as you go. Cover the roll with plastic wrap and refrigerate for at least 2 hours. Unwrap onto a plate. Top with reserved shrimp and chopped green onions. Serve on a plate with crackers and celery pieces.
