Cherry Tomato Bruschetta
Prep Time: 10 minutes
Cooking Time: 5 minutes
This is a healthy and delicious appetizer. We use cherry tomatoes for extra flavor and because they are usually available year round. Use whole grain baguettes for an even healthier version.
1 9 ounce baguette of French Bread, 9 ounces
2 tablespoons olive oil
1 pint tomato(es), grape or cherry
1/2 cup basil, fresh, chopped
2 cloves garlic, fresh, chopped
1 teaspoon vinegar, balsamic
Cut tomatoes into quarters and place in a medium size bowl. Mince garlic and add to tomatoes. Chop basil and add to tomatoes. Drizzle in balsamic and 1 tablespoon of olive oil. Mix gently and set aside. Slice baguette into thin slices. Place on a baking dish and brush with olive oil. Bake at 400 degrees for about 5 minutes until light golden brown. Serve toasted baguette on a serving tray with the bowl of tomatoes on the side for everyone to make their own, or arrange on a platter with tomato mixture spooned over the top of each.
