Chicken with Pesto, Cheese and Pine Nuts

This is a simple but delicious way to serve chicken. It also only has 360 calories and 6 grams of carbs.

Ingredients

1 1/4 pounds chicken breast, boneless and skinless

1/2 cup cheese, mozzarella, low moisture and part skim milk, shredded

2 tablespoons pesto sauce (prepared)

2 tablespoons nuts, pine nuts, toasted

1/4 teaspoon salt

1/4 teaspoon pepper, black, ground

2 teaspoons olive oil

1/2 cup chicken broth, reduced sodium (or vegetable broth, reduced sodium)

basil, fresh, chopped

Preparation

Carefully cut into each chicken breast lengthwise to open it like a butterfly or book. Divide the pesto, cheese and pine nuts among the chicken breasts. Spread the pesto on the chicken, then add the cheese and pine nuts. Fold the breast up and secure with toothpicks. Place a large skillet over medium high heat. Season each chicken breast with salt and pepper. Add oil to the skillet, then add the chicken and cook for about 5 minutes on each side. Add chicken broth to the skillet to deglaze the pan. Lower the heat to simmer and place the lid on the skillet. Turn the stove off and let sit on the stove for 2-3 minutes. Serve on a plate and spoon the broth over each. Top with fresh chopped basil.
