Spaghetti Squash Bowls

This is a great presentation and is healthy and delicious. It is also vegetarian! You can shorten the cook time by starting the squash in the microwave

Ingredients

2 small squash, spaghetti, approximately 1 pound each

1 cup cheese, mozzarella, low moisture and part skim milk, shredded

3 tomato(es), medium, seeded, chopped

4 green onion(s) , chopped

1/2 cup nuts, pine nuts

1/4 cup basil, fresh, snipped

1 tablespoon olive oil

2 teaspoons garlic, minced

2 tablespoons parmesan cheese, grated

1/8 teaspoon salt

1/8 teaspoon pepper, black, ground

Preparation

Halve the spaghetti squash and remove the seeds. Place squash cut side down on a lined baking sheet and bake at 350 degrees for about 1 hour or until squash is tender -OR- to microwave, place squash cut side down on a microwave safe dish/plate and microwave for 15 minutes, and,if necessary for an additional 5 minutes until tender. With a fork, rake the squash from the sides of the skin, but leaving it in the shells. Sprinkle each squash with the mozzarella cheese, lightly mix and then push back up along the sides of the shells to make room for the tomato mixture. For the filling, combine tomatoes, green onions, nuts, basil, oil, garlic, salt and pepper. Spoon filling into squash shells. Sprinkle with parmesan. Bake for 20 minutes or microwave for about 5 minutes until heated through. Serve.
