Spiced Apple Tea

This is a great way to make tea time special. It also makes your home smell like the holidays! If you like your tea strong, then add a few extra tea bags.
1 tablespoon lemon(s), juice, fresh
1 tablespoon lemon(s), peel
4 cups juice, apple
3 sticks cinnamon, 4 inch
1 tablespoon cardamom pods, crushed
1 teaspoon cloves, whole
8 tea bags
1/2 cup maple syrup
1 apple(s), fuji or other, sliced for garnish
In a large saucepan combine apple juice, 2 cups of water and lemon juice. To make a spice pack place cinnamon sticks, cardamom, cloves and lemon peel in a 8 inch square of cheesecloth and tie corners -or- place cloves, cardamom and lemon peel in a tea strainer and cinnamon sticks directly into the pan. Boil all ingredients, reduce heat, cover and simmer for 10 minutes. Remove from heat and add tea bags. Cover and let stand for 5 minutes. Remove tea bags and all spices. Stir in maple syrup. Serve by floating apple slices and/or cinnamon sticks.
