1 3/4 cup milk, 2% fat
3 egg(s), large, lightly beaten
3/4 cup pumpkin puree
1/4 cup canola oil or vegetable oil
2 cups flour, whole wheat or all purpose
3 tablespoons brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon, ground
1 pinch nutmeg, ground, (optional)
Preheat griddle to medium high heat or about 350 degrees (a little lower than for regular pancakes). In a large mixing bowl mix together the milk, eggs, pumpkin and oil. Add the flour, brown sugar, baking powder, salt, cinnamon and nutmeg. Mix well. Pour about 1/2 cup of pancake mix onto griddle and cook until the middle begins to bubble and then flip. Total cook time is about one minute. Watch closely to prevent from burning. Serve with butter and maple syrup.
