Rice with Black Beans and Pineapple

This could be a main dish itself, but is also a great side dish for tacos, enchiladas or grilled meats.

Ingredients

1 cup rice, long grain white, uncooked

2 cups vegetable broth, reduced sodium

1 cup black beans, reduced sodium

1 cup salsa, red

1 cup pineapple, fresh, cut into 1 inch cubes

1/2 cup corn, frozen white kernels, or fresh

1/2 cup cilantro, fresh, chopped

2 teaspoons olive oil

Preparation

In a small saucepan, add olive oil and heat over medium high heat. Add rice and stir, cooking for about 1 minute. Add broth, and bring to a boil. Reduce heat to a simmer and cover, cook for approximately 20 minutes. When done, pour rice into a serving bowl and stir in salsa, beans, corn, cilantro and chopped pineapple.
