Cranberry Apple Relish

The pectin in the apple allows this cranberry sauce to firm up enough to use in a mold.

Ingredients

1 bag(s) (10 ounces) cranberries, fresh, reserve 5 for garnish

1 apple(s), fuji or other, diced

1 cup sugar

Preparation

Place 3/4 cup water and all ingredients into a sauce pan. Bring to a low boil and cook for about 15 minutes or until cranberries begin to break down. Stir occasionally. To prepare the mold, line a loaf pan with plastic wrap and spray the wrap with cooking spray. Pour the cooled mixture into the loaf pan and refrigerate for at least 3 hours. When ready to serve turn the pan onto a plate and remove the plastic wrap. Garnish with a few fresh cranberries.
