Roasted Bell Peppers

Peppers have such great nutritional value. These are great in a salad, in soft tacos or just by themselves.

Ingredients

4 pepper(s), bell, red, yellow, or green, seeded and quartered lengthwise

1 tablespoon olive oil

1 teaspoon vinegar, balsamic

1/2 teaspoon salt

Preparation

Preheat oven to 375 degrees. Place quartered peppers in a large bowl. Add vinegar, oil, and salt and toss to coat. Arrange peppers in a single layer on a foil lined baking sheet and bake in oven for 20 to 25 minutes until soft. Allow to cool for 5 minutes and then peel skin from peppers if desired. Serve warm or cold.
