Couscous with Asparagus and Sun Dried Tomatoes


Serves: 6 as a side dish

This is a simple side dish for chicken fish or many other main dishes.

Ingredients

1 cup couscous, whole wheat, dry

1 cup water

2 teaspoons olive oil

1/4 onion(s), chopped

1 teaspoon garlic, bottled minced

1/2 teaspoon salt

1/4 teaspoon pepper, black, ground

1 pound asparagus

2 tablespoons sundried tomatoes, drained and chopped

2 teaspoons nuts, pine nuts, toasted

Preparation

Heat olive oil in a medium sauce pan over medium heat. Add onion and garlic and stir. Remove tough stems from asparagus, and cut into one inch pieces. Add asparagus to pan and stir. Add salt, pepper and sundried tomatoes. Add water and bring to a boil. Once boiling, add couscous and stir. Cover and remove from heat. Allow to sit with cover on for 5 minutes. Fluff with a fork, garnish with pine nuts and serve.
