Mexican Rice with Mixed Vegetables

Cooking Time: 20 minutes
This is a simple side dish for southwest and Mexican meals.
1 cup rice, long grain white
2 cups vegetable broth, reduced sodium
1 tablespoon olive oil
1 cup vegetables, mixed, frozen
3/4 cup salsa, red
Heat oil in a medium sauce pan over medium heat. Add rice and stir. Cook for about 30 seconds. Add broth, vegetables and salsa, stir and bring to a boil. Place cover on pan and reduce heat to low. Simmer for about 20 minutes until liquid is absorbed and rice is soft. Sitr and serve.
