Stir Fry Bok Choy with Cashews

This is a quick and healthy Asian side dish. My kids love the flavors.
1 pound bok choy, roughly chopped
1 onion(s), medium, quartered and sliced
2 teaspoons sesame oil, dark
2 teaspoons soy sauce, gluten free, low sodium
1/4 cup cashews, raw, toasted
Place a large skillet over medium high heat. Add sesame oil. Add onions and stir, cooking for about 1 minute. Add bok choy and stir. Continue cooking for 1 to 2 minutes. Add soy sauce and stir. Arrange on a serving plate and top with cashews.
