Wild Rice with Almonds and Apricots

This is simple and delicious. The fruit and nuts give it extra flavor and texture, as well as nutrition

Ingredients

1 pkg wild rice mix, such as Farmhouse

1 tablespoon olive oil

1/2 cup celery, chopped

1/4 onion(s), chopped

1/4 cup apricots, dried, chopped

1/4 cup nuts, almonds, slivered

1 1/2 cups water

Preparation

Heat oil in a medium saucepan. Add chopped celery and onion. Saute for 1 minute. Add 1 1/2 cups of water and remaining ingredients to pan. Bring to a boil over medium high heat. Stir, place cover on pan and reduce heat to a low simmer. Cook for about 25 minutes until rice is done and liquid is fully absorbed.
