Bacon Cheddar Corn Muffins

Cooking Time: 15 minutes
These are quick and easy. They make a good side to soup or salad and even make for a good breakfast on the run. My pickiest eaters even like these drizzled with honey.
1 package corn muffin mix, such as Jiffy
1 egg(s), large
1/3 cup milk, whole
4 slices bacon, precooked and reduced sodium
3/4 cup cheese, cheddar, shredded
1 tablespoon ground flax seed, (optional)
12 muffin papers
Preheat oven to 400 degrees (or according to corn muffin package instructions). Cut bacon into small pieces. Combine all ingredients, fill muffin tins 1/2 full, and bake according to package instructions (about 15 - 20 minutes).
