Slow Cooker Bacon and Mushroom Breakfast

This makes a great breakfast, brunch or dinner. Turkey bacon is much lower in fat and calories than regular bacon, or you can make it without the bacon for a great vegetarian dish.

Ingredients

3 cups bread, French

1/2 pound bacon, turkey

2 cups mushrooms, Crimini or button or combo

2 cups spinach, fresh baby

8 egg(s), large

1/2 cup milk, 2% fat

1 pepper(s), bell, red, yellow, or green, finely chopped

1 cup cheese, jack

1/2 teaspoon salt

1/2 teaspoon pepper, black, ground

1/4 teaspoon garlic powder

Preparation

Spray inside of slow cooker with cooking spray. Cut bread into half inch cubes and place in the bottom of the slow cooker. Heat a large skillet over medium high heat. Cut the turkey bacon into half inch pieces and cook in the skillet until crispy. Remove the bacon with a slotted spoon and arrange on top of the bread. Drain most of the oil from the skillet. Slice mushrooms and place them in the skillet. Chop pepper into a small dice and add to mushrooms. Cook over medium high heat for 1 to 2 minutes. Add spinach and stir. Remove skillet from heat. Arrange vegetables over the bread. In a large mixing bowl, beat eggs. Add milk, salt, pepper and garlic powder. Add cheese and stir. Pour mixture over the vegetables and use a spoon to even it out over the top. Place slow cooker lid on and cook for 2 hours on high or 3 hours on low.
