Green Beans with Dijon Dipping Sauce

This makes a healthy and light appetizer or side dish. You can use a grainier mustard or a hot mustard in the sauce as well.

Ingredients

1 pound green beans

1/3 cup mayonnaise, light or reduced fat

2 tablespoon Dijon mustard

2 teaspoons honey

Preparation

Rinse green beans and place on a cutting board matching up the ends. Cut the rough end off and discard. In a medium pot, bring 5 cups of water to a boil. Add salt and the beans to the water. Cook for approximately 2 minutes until just tender. Remove from heat and drain. Place the beans in a large bowl of ice water to stop the cooking process and retain the bright green color. Once cooled, remove from water and pat dry. To make the dipping sauce, mix mayonnaise, Dijon, and honey in a small bowl. Pour into a small serving bowl. Place the beans on a small platter with the dipping sauce next to it.
