Thai Coconut Couscous

This is a simple but delicious side dish for Asian meals.
1 cup couscous, dry
1 cup vegetable broth, reduced sodium
1/4 cup coconut, flaked
1/4 cup cilantro, fresh, chopped
1/4 cup nuts, cashews, roasted and salted, chopped
2 green onion(s) , chopped
2 teaspoons garlic, bottled minced
Coat a small sauce pan with cooking spray. Heat over medium high heat. Add coconut and cook for about one minute until lightly browned. Add garlic and stir. Add broth and bring to a boil. Add couscous and cover with lid. Remove from heat and let sit for 5 minutes. Top with chopped cilantro, green onion, and cashews and serve.
