Thai Chicken Skewers
Prep Time: 10 minutes plus 15 minutes marinating
Cooking Time: 10 minutes
The marinade has peanut butter and Thai curry paste. Serve with rice or couscous.
1 1/2 pounds chicken breast, boneless and skinless
1/4 cup peanut butter, natural creamy or crunchy
1 tablespoon honey
1 teaspoon red curry paste, Thai Kitchen or other
2 tablespoons soy sauce, low sodium
1 pepper(s), bell, red, yellow, or green
1/2 pineapple, fresh
1 onion(s), red
For the marinade, mix peanut butter,soy sauce, curry paste, honey and lime juice in a small bowl and mix well. Cut the chicken into 1 inch cubes and place in a zip lock bag. Pour the marinade over the chicken and mix to coat well. If marinating more than 15 minutes, place in refrigerator. Cut the vegetables and thread the chicken and the vegetables onto the skewers, placing a variety on each skewer. Grill for about 10 minutes turning 2 or three times until chicken is cooked through.
