Spinach Rolls

Serve these as a main course or cut them into 1 inch slices as an appetizer.

Ingredients

3/4 cup cream cheese, 1/3 less fat, softened

1/4 cup ranch dressing, light or reduced fat

6 green onion(s)

4 slices bacon, reduced sodium, cooked, crumbled

1 tomato(es), medium, seeded, chopped

6 cups spinach, fresh baby

6 tortillas, whole wheat 7 inch

Preparation

In a large bowl, soften the cream cheese and mix in the ranch dressing, green onions, bacon, tomato, and spinach until well blended. Spread over the tortillas and roll up tightly. Wrap each roll in plastic wrap and refrigerate overnite or for at least a few hours. Using a serrated knife, cut into 1 inch slices and arrange on plate or tray.
