Pistachio Chicken Strips with Honey Mustard Sauce
Serves: 4 main dishes or 8 small dishes.

The young kids love these strips with a variety of dipping sauces such as ketchup or ranch dressing. These are also good sliced and added to your favorite salad.
1 1/2 pounds chicken breast, boneless and skinless, tenders
3 ounces pistachio nuts, shelled
2 tablespoons olive oil
1/4 cup mayonnaise, light or reduced fat
1 tablespoon Dijon mustard
1 tablespoon honey
1/2 tablespoon lemon(s), juice
cooking spray, olive oil type
Preheat oven to 400 degrees. Place shelled pistachio nuts into blender and pulse for approx 15-20 seconds until most of the nuts are powdered with some larger chunks (stopping and stirring to mix). Place nut coating in shallow dish for dredging. Coat chicken tenders in olive oil and dredge in nut coating. Coat broiler pan or baking sheet with cooking spray. Place coated chicken on broiler pan or baking sheet and coat top of chicken with cooking spray. Bake chicken for approx. 15 minutes until thoroughly done. For dipping sauce, combine mustard, mayonnaise, honey and lemon juice in small bowl. Serve strips with dipping sauce on the side.
