This is a great way to dress up tomatoes.
4 slices bread, sourdough, medium slice
1 tablespoons garlic, bottled minced
1 tablespoons olive oil
1/2 cup parmesan cheese, shredded
4 tomato(es), medium, sliced
1/2 cup basil, fresh, chopped
1/2 teaspoon pepper, black, ground
1/4 teaspoon salt
Preheat oven to 450 degrees. To make the bread crumb topping place bread into a food processor and process until course bread crumbs are formed. Add the olive oil, garlic and cheese and process until combined. Spread the breadcrumb mixture on a baking sheet and bake until very lightly browned for about 5 minutes. Meanwhile, spray a shallow baking dish with cooking spray. Layer sliced tomatoes, salt, pepper and basil until all are used. Bake tomatoes for 10 minutes. Top with breadcrumbs and bake for about 10 more minutes.
