Quick Cheesy Potatoes

Kind of a quick and easy version or au gratin potatoes and your kids will love them!
2 pounds potato(es), russet, peeled and thinly sliced on an angle
1 1/2 cups cheese, cheddar, grated
1/4 cup milk, whole
1/4 teaspoon salt
1/4 teaspoon pepper, black, ground
cooking spray, gluten free
Preheat oven to 400 degrees. Cut potatoes in half and then slice them into 1/4 inch slices. Place the potatoes in a medium sauce pan and fill with enough water to just cover the potatoes. Place on the stove over high heat and bring to a boil. Reduce the heat slightly and lightly boil potatoes for approximately 5 to 7 minutes(until fork tender). Spray an 8 by 8 inch baking dish with cooking spray. Remove potatoes from the stove and drain. Place a layer of potatoes in the baking dish, sprinkle with 1/3 of the cheese, and 1/3 of the milk. Add two more layers like this and then season with salt and pepper. Place in the oven for 7 or 8 minutes until cheese is bubbly.
