Green Chili and Cheese Potatoes

These are a quick and easy side dish that goes well with steak or any southwest or Mexican food.
1 1/2 pounds potato(es), red
1 can (4 ounces) green chilies, mild in can already chopped
1 1/2 cups cheese, cheddar or jack, shredded
1/3 cup milk, 1% fat
1/4 teaspoon salt
1/4 teaspoon pepper, black, ground
cooking spray, olive oil type
Preheat oven to 400 degrees. Slice the potatoes into quarter inch pieces and place in a medium pot. Cover the potatoes with water and bring to a boil over high heat. Reduce the heat to medium low and cook the potatoes for about 5 minutes until fork tender. Spray a baking dish with cooking spray. Drain the water from the potatoes and place the potatoes in the baking dish. Pour the milk evenly over the potatoes, season with salt and pepper, sprinkle with green chilies and then with cheese. Bake in a 400 degrees oven for about 7 to 10 minutes until cheese is melted.
