Green Chile and Cilantro Rice with Black Beans

This is a great side dish for Mexican or southwest cuisine.
2 cups rice, long grain white
1 can (15 ounces each) black beans, unsalted and fat free
1 can (4 ounces) green chilies, mild in can already chopped
1 cup salsa, green
4 cups vegetable broth, reduced sodium
1 whole onion(s), medium
1 tablespoon olive oil
1/4 cup cilantro, fresh, chopped
In a large saucepan, heat the oil over medium high heat. Chop the onion and add to the pan. Cook the onion for about 2 minutes. Add the rice and stir. Cook for one minute. Add the broth, beans, salsa and chopped green chilies. Bring to a boil and stir. Place the lid on the pan and reduce the heat to the lowest simmer. Cook for about 20 minutes until liquid is absorbed and rice is soft. Garnish with cilantro.
