Mock Creamy Garlic Potatoes

These are a great way to get your family to eat cauliflower. You can barely tell they aren't potatoes.
1 head cauliflower
1 tablespoon cream cheese, 1/3 less fat
1/4 cup sour cream, low fat or light
1/4 cup parmesan cheese, grated
1 tablespoon vegetable broth, reduced sodium
1 teaspoon garlic, minced
1/8 teaspoon pepper, black, ground
1 tablespoon chives, fresh, chopped
Set a pot of water to boil over high heat. Clean and cut cauliflower into small pieces. Cook in boiling water for approx 6 minutes or until tender. Drain cauliflower well. Return cauliflower to original pot. Add cream cheese, sour cream, parmesan cheese, garlic, broth and pepper to cauliflower. Use an immersion blender or potato masher to puree or mash all ingredients until smooth. Garnish with chives if desired and serve.
