This recipe is quick, and you can find Roma tomatoes year round. Or you can use canned tomatoes.
1 baguette of French Bread, 9 ounces
4 tablespoons olive oil
2 tablespoons garlic, bottled minced
6 tablespoons basil, fresh, chopped
8 tomato(es), Roma, chopped
Chop tomatoes and place the in a small bowl. Add the garlic, chopped basil and one tablespoon olive oil. Mix gently and set aside. Preheat the broiler. Slice the baguette into quarter inch thick slices. Brush the tops with remaining olive oil or you can lightly spray each side of the bread with cooking spray for a lower fat version. Place the bread on a baking sheet. Broil for about one minute until light but toasted (watching closely so it does not burn). Spoon the tomato mixture on top of each piece of bread and top with a basil leaf if desired, or arrange the bread around a platter with the tomato mixture in a small bowl in the center.
