Italian Vegetables With Herbs

The fresh vegetables are quick and easy. The oregano adds a nice Italian touch.
1 zz, sliced
2 carrot(s), peeled and sliced
1 pepper(s), bell, red, yellow, or green, seeded and chopped
1 teaspoon oregano, dried leaves
1 teaspoon garlic, bottled minced
1/4 teaspoon salt
1/4 teaspoon pepper, black, ground
1 tablespoon olive oil
1/4 pound asparagus, (optional), trimmed and cut into 1 inch pieces
Heat a medium skillet over medium heat. Add the oil, then the carrots. Cook for a minute and then add the peppers, zucchini and garlic and stir. Cook for about 2-3 minutes, stirring occasionally. Add salt, pepper and oregano, stir and serve.
