Roasted Garlic Herb Fries

These are a little healthier than their fried version. They take a little longer in the oven, but they are worth it!
3 potato(es), russet
2 tablespoons garlic, minced
1/2 teaspoon salt
2 tablespoons canola oil or vegetable oil
1 tablespoon chives, fresh
1 tablespoon parsley, fresh, flat leaf
cooking spray, olive oil type, gluten-free, not baking type
Preheat the oven to 425 degrees. Peel and slice potatoes into french fry sized pieces. Spray a baking sheet (or two) with cooking spray. Combine the cut potatoes and 1 1/2 tablespoons of canola oil in a bowl and toss, coating the potatoes. Arrange potatoes in a single layer on the baking sheet(s.) Sprinkle with salt. Roast in the oven for about 25 minutes. While they are roasting, place the garlic and half tablespoon of oil in a small bowl and mix. Add the chopped chives and parsley and mix. Sprinkle the garlic mixture over the fries, turn the oven off, and put it back in the oven while it is still hot, but turned off for about 5 minutes. Remove from oven, gently toss and serve.
