Roasted Tomatoes With Parmesan Pesto

These make a great side dish or appetizer. You can also cook these directly on an outdoor grill over medium high heat.
4 tomato(es), Roma, or other
2 tablespoons pesto sauce (prepared), gluten free
1 tablespoon parmesan cheese, fresh, grated
2 tablespoons cheese, mozzarella, low moisture and part skim milk
For oven roasting, preheat the oven to 500 degrees. Cut the tomatoes in half and place them on a baking sheet. If the tomatoes are not standing upright,you can carefully peel a small piece from the bottom to make a flatter base. Spread the pesto sauce on top of each tomato. Sprinkle with the mozzarella and then the parmesan. Roast in the oven for 8 to 10 minutes until the cheese is bubbling. To grill outdoors, heat grill to medium high heat. Place tomatoes directly on grill. Close cover and cook about 8 to 10 minutes, or until tomatoes are soft and cheese is melted.
