Roasted Broccoli with Parmesan

This is a simple way to add lots of flavor to broccoli. My kids really like it prepared this way!

Ingredients

1 1/2 pounds broccoli florets

1/2 teaspoon salt

1/4 teaspoon pepper, black, ground, toasted

cooking spray, olive oil type

2 tablespoons parmesan cheese, grated

Preparation

Preheat oven to 400 degrees. Cover a rimmed baking sheet with foil and coat with cooking spray. Remove tough end from stem, then peel the tough skin from the remaining part of the stems using a vegetable peeler. Cut broccoli into half inch thick strips. Place broccoli in a single layer on top of baking sheet. Spray tops with cooking spray and season with salt and pepper. Place on top rack of oven and bake for 15 to 20 minutes. Remove from oven, sprinkle Parmesan cheese and serve.
