Rice with Cilantro and Green Chili

The salsa is mild but adds nice flavor to the rice.

Ingredients

1 cup rice, long grain white

2 cups chicken broth, reduced sodium (or vegetable broth, reduced sodium)

1/4 onion(s), medium

1/3 cup salsa, green, salsa verde

1/2 cup cilantro, fresh, chopped

2 teaspoons olive oil

Preparation

Chop the onion. Place a medium sized sauce pan over medium high heat. Add the oil, then the onions and cook for a minute or two. Add the rice and stir. Cook for a minute or so. Add the salsa and the broth and bring to a boil. Place the lid on the pan and reduce the heat to a low simmer. Cook for about 18 to 20 minutes until broth is fully absorbed. Stir in cilantro before serving.
