Chicken Stuffed with Green Chiles and Cheese

This is low carb, easy to make, and delicious enough for company. If the kids don't like green chilis, just put the cheese and corn in theirs.

Ingredients

1 1/2 pound(s) chicken breast, boneless and skinless

3/4 cup cheese, jack

2 tablespoons cilantro, fresh, chopped

3 green onion(s) , chopped

4 ounces green chilies, mild in can whole

1/4 cup corn, frozen white kernels, or fresh

1/2 teaspoon garlic powder

1/2 teaspoon cumin, ground

1/4 teaspoon salt

1/4 teaspoon pepper, black, ground

2 teaspoons olive oil

1 tomato(es), medium

1/2 avocado(s), Haas or any

Preparation

Grate the cheese. Chop the tomato, avocado, cilantro, and green onions and set aside for garnish. Cut through the side of each chicken breast lengthwise and open up like a book (be careful not to cut all the way through). Divide the cheese among the chicken breasts and sprinkle inside each one. Place one green chili cut in half lengthwise on top of the cheese. Sprinkle with the corn. Fold the chicken back over the stuffing and secure with toothpicks. Season the chicken with the cumin, garlic powder, salt and pepper. Place a large skillet over medium high heat. Add the oil. Add the chicken and cook for about 5 or 6 minutes before turning. Turn the chicken and cook for another 5 minutes until cheese is melting and chicken is cooked through. Remove the chicken and place on a plate. Top with tomato, avocado, cilantro and green onions.
