Fried Rice with Ham and Veggies


Serves: 6 as a side dish

Fried rice is one of those dishes that you can add just about any vegetable or meat to. We recommend Brown Basmatti or Jasmine rice, but you can use any.

Ingredients

2 cups rice, brown, quick cook

1 carrot(s), chopped into small pieces

1 cup green beans, chopped into small pieces

4 ounces ham, cut into small cubes

3 green onion(s) , chopped

1 egg(s), large, beaten

2 tablespoons soy sauce, low sodium

2 teaspoons sesame oil, dark

2 teaspoons garlic, bottled minced

1/2 cup peas, frozen

Preparation

Place 2 cups of water in a medium sauce pan and bring to a boil. Add rice and cook according to package directions. Meahwhile, heat a large skillet over medium heat. When hot, add the sesame oil and garlic to the skillet and cook for about 1 minute. Add ham and allow to brown quickly over medium high heat for about 1 minute until browned. Add carrots and green beans. Stir while cooking over medium high heat for about 1-2 minutes. Add the soy sauce and stir. Add the rice and mix well with the ham and veggies. Move the rice mixture to the side of the pan a little to make room to scramble the egg. Add the egg to the pan and let it cook for a minute or so. Add the peas and the green onions and lightly toss everything together. Serve in a small bowl or side of plate.
