Polenta with Gorgonzola

Cooking Time: 20 minutes
If you don't like gorgonzola, you can substitute parmesan cheese.
1 1/2 cups milk, 1% fat
1/2 cup water
2/3 cup polenta, dry, uncooked
2 tablespoons cream cheese, 1/3 less fat
1 tablespoon gorgonzola cheese
1/8 teaspoon pepper, black, ground
Pour the milk and water into a large saucepan and heat over medium high heat. Bring the liquid to a boil and then turn the heat down to medium low. Slowly pour the polenta into the liquid, using a whisk to mix as you pour. Cook over low heat stirring occasionally until the polenta is thick (about 20 minutes). Remove from the heat and stir in the cream cheese, black pepper and gorgonzola. Serve hot as a side dish.
