Orzo with Spinach and Pine Nuts

This is a simple and nutritious side dish. It goes well with chicken, fish, pork or steak.
1 1/3 cups orzo, uncooked, about 8 ounces
2 cups spinach, fresh baby, chopped
1/4 cup onion(s), red, chopped
2 teaspoons butter
1/4 teaspoon salt
3 tablespoons parmesan cheese, shredded
1/4 cup nuts, pine nuts
Boil the Orzo in a large pot of water according to directions on package. While the orzo cooks, toast the pine nuts on a baking sheet at 350 degrees for 5 or 6 minutes. Drain orzo. In the same pan, melt the butter and then add the chopped onions, spinach and salt and stir. Add the orzo and Parmesan and mix well with the spinach. Pour into a serving bowl and top with pine nuts. Garnish with additional Parmesan if desired.
