Fried Rice with Steak


Serves: 6 as a side dish

My kids LOVE fried rice. It is a great way to use leftover roast, chicken, steak, pork, etc. Use frozen or fresh vegetables in it. We use quick cooking brown rice and it turns out great, or you can use leftover rice as well!

Ingredients

2 cups rice, brown, quick cook

1 1/2 cups water

1 carrot(s), chopped

6 ounces mushrooms, Crimini or button or combo, sliced and chopped

1 egg(s), large, beaten

1 cup green beans, chopped (or frozen peas)

4 ounces steak, lean sirloin or any favorite, cut into small bite size pieces

3 green onion(s) , chopped

2 tablespoons soy sauce, low sodium

2 teaspoons sesame oil, dark

2 teaspoons garlic, bottled minced

2 teaspoons olive oil

Preparation

Heat water in a small sauce pan and bring to a boil. Add rice and stir, then cover and reduce heat and cook for about 7 minutes. Meanwhile, heat a large deep skillet or wok over medium high, and add the oil and garlic. Cook for about 1 minute. Add the sesame oil and then the steak and allow to brown quickly over medium high heat for about 1 minute until browned. Add the mushrooms, carrots and green beans or frozen peas. Stir while cooking over medium high heat for about 1-2 minutes. Add soy sauce and stir. Add the rice and mix well with the steak and veggies. Move the rice mixture to the side of the pan a little to make room to scramble the egg. Add the egg to the pan and let it cook for a minute or so. Toss everything together with a spatula or tongs until rice is heated through. Top with green onions and serve in a medium bowl .
