About Us

Our Recipes:

Our goal at The Simple Skillet is to make mealtime simple and delicious, and also keep good nutrition in mind. We provide nutrition information with our recipes to help you make choices that are right for your family. We include occasional splurges to keep mealtime interesting and fun. Keep in mind that you can modify the recipes to fit your tastes by adding or substituting ingredients even though our recipes will generally recommend light and low fat versions of meat, dairy and other ingredients. Our low carbohydrate meal plans generally include recipes with 15 grams or less of carbohydrate, but check the detailed nutritional information at the bottom of each recipe for detail information. While we are not recommending low carbohydrates as a daily way to plan your meals, we recognize that some individuals want to limit their overall carbohydrate intake and are interested in meals that are low in carbohydrates. Our low calorie meal plans generally include meals that are usually 400 calories or less for the meal.

Diana W. Wright, PhD, RD

Diana reviews recipe nutritional information for The Simple Skillet and contributes ideas and articles on nutrition. With over 25 years of experience as a nutrition educator, she is a Registered Dietitian in private practice with Bay Area Nutrition, LLC and is a faculty member at De Anza Community College in the bay area. Diana received her PhD in Nutrition from UC Davis. Her primary goal in nutrition is to assist people as they work to optimize their health using diet, exercise and stress management. Diana strives to translate complex and confusing nutrition information and make it practical and understandable for her clients. Her interests in nutrition include the politics of food, diabetes education, eating disorders and sports nutrition. Chris Louie

Chris Louie, founder of both The Diabetic Skillet and The Simple Skillet, is married and has two teen aged boys. Chris has a degree in business, and as a working professional for over 25 years, has struggled with the common balancing act between work and family. Preparing family dinner at home had always been a priority, yet big time challenge for Chris. Without a weekly plan she would end up at the grocery store three or four times a week, buying things she didn't need and spending a lot more money. This struggle led to the launching of The Simple Skillet. Most of her time is spent writing and developing recipes and other content for the websites.

Bev Quinby

Bev Quinby

Bev Quinby assists with website materials and content for The Simple Skillet. She has been known to write some recipes and contribute photography as well. She is married and has two teen aged boys. As a working mom in Silicon Valley, Bev also struggled with weeknight dinners. Over the years, Bev has relied on the internet as a source for meal ideas, and loves how easy meal planning and grocery shopping is with The Simple Skillet. Bev is an active mom and enjoys cooking and spending time with her family—while juggling work, carpooling, and after school sports with her two boys.

Kimberly Shannon

Kimberly Shannon, MA, MFT

Kim writes articles on family issues for The Simple Skillet. She is a licensed Marriage and Family Therapist of 20 years and has a private practice in Morgan Hill, CA. Kim holds a M.A. in Marriage Family Child Therapy from California Family Study Center (currently known as Phillips Graduate Institute) and a Bachelor of Arts in Child Development with an emphasis as a Child Mental Health Specialist and a Minor in Psychology from California State University, Northridge. Her professional work includes work in both inpatient and outpatient psychiatric facilities, inpatient eating disorders programs, substance abuse programs, group homes, school programs, and private practice. Kim has completed coursework as a child custody evaluator. Her specialties include working with children, adolescents and families. Kim and her husband, John, have a teenage daughter.
